Everyone always talks about making soup from leftover turkey from Thanksgiving. This was so simple. We already had the grilled turkey, and broth pre-made for the gravy.
All I needed to add was some mirepoix, which is finely chopped onions, celery and carrots, already done at Trader Joe’s market. (They had also added some fresh rosemary and thyme to it, too.)
I sautéed them up, added some beautifully sliced rainbow carrots on top.
Then added the container of frozen turkey broth I had made the other day from the turkey wings and backs.
And lastly added the leftover grilled turkey and chopped pieces of meyer lemon from my garden, and kosher salt. That’s all!

Let it cook away on the stovetop with the lid on, slightly askew. And have a good time on the phone.
