Homemade Ginger Tea and Candied Ginger, Yum!

Ginger has been around for so long and used in so many healing traditions. It warms the digestive tract, helps in digestion and is hugely anti-inflammatory. In this recipe I first made it into a tea and then used it to make my own candied ginger for a lovely dessert topping. How about that!

Boil drinking water, turn to very low and set in sliced ginger root, keep on low and covered for about 45 minutes. Turn off, keep lid on and let steep for a few hours. And here is the tea. Since ginger is a root, per se, you can let the pieces stay in the water after pouring into the mason jar. It will not become bitter like a leaf can.

Here are the slices of ginger after making the tea. I then, sliced them into slivers ready to spice them up for candy making.

Put ginger slivers into pan with sugar, (I sometimes use raw organic coconut sugar) and heat up very slowly on low and let sauté.

                Are you ready for this very deliciously simple dessert?! Here goes!

Goat yogurt, very lightly sweetened with honey, blueberries, topped with candied ginger pieces, all drizzled with the ginger sauce!

How amazing is this?! Goat yogurt very lightly sweetened with local honey, topped with organic blueberries,and the homemade candied ginger, finally drizzled with the leftover sweet ginger sauce from the candied ginger! What an absolutely easy and super delicious dessert! It warms the coddles of my heart all the way down to my belly. As my father used to say in German, “It’s goodie for de bauchkie!” Meaning, “It’s good for the soul, but first it needs to go through your belly!”
